Fortaleza Blanco Tequila is a highly regarded, additive-free blanco tequila, produced using traditional methods at a historic family distillery in Tequila, Jalisco, Mexico. The process starts with slowly cooking estate-grown blue agave in stone ovens for 36 hours. After cooling for another 24 hours, the agave is crushed with a two-ton volcanic stone wheel called a tahona. Fermentation occurs naturally in open-air wooden tanks using the family's proprietary yeast strain. This is followed by double distillation in traditional copper pot stills, preserving the agave's natural flavors.
